How to: Sunday Roast Potatoes
Every Sunday roast deserves the best roasties to accompany it, follow our easy step by step guide this Sunday!
Step 1: Gather potatoes
Pre heat oven to 200℃ (Fan)
Gather 1kg (2-3 people) of potatoes, peel & chop (Cut in 4 pieces, smaller potatoes into 2 pieces).
Not all potatoes are made equal and we recommend Albert Bartlett Red Roosters.
Step 2: Wash
Put potatoes in colander & give a wash. This removes excess starch and washes away & debris from peeling
Step 3: Boil
Put potatoes in cold water, pinch of salt & cover with lid & bring to the boil. Once boiling remove lid & simmer till tender but not too soft. (approx. 10 mins, every so often move potatoes around for even cooking)
Step 4: Garlic (Optional!)
We love a bit of garlic in our roasties, but if it’s not for you, then you can skip! However if your partial like us, then while potatoes are cooking, peel & smash 4 small garlic cloves. On a garlic scale this will produce a medium garlic taste to your potatoes.
Step 5: Drain & Fluff!
Remove potatoes from heat, drain water off in colander. Shake the potatoes gently in the colander to make all the edges fluffy, make sure they are all evenly fluffed!
Step 6: Oil your oven dish
Get your oven or Pyrex dish ready and fill with 50/50 of organic sunflower oil and organic olive oil, until bottom is covered with 5mm.
Place in oven till oil is hot ( approx. 5mins)
Step 7: Toss in oil & season
Remove dish from oven and gently place potatoes in the hot oil carefully. With a wide spatula gently turn the potatoes till they are all covered in the hot oil. Then add your smashed garlic cloves evenly around amongst the potatoes, ensuring cloves are submerged in oil.
Finally season liberally with salt & pepper to your liking.
Step 8: Roast those Roasties
Place potatoes in oven for approx. 45mins to an 1 hour. Your looking for the edges to be nice and golden but not burnt.
Step 9: Drain off oil
Remove potatoes from oven and carefully drain off excess oil, this ensures a less soggy & greasy roastie & instead gives a nice crispy one!
Turn potatoes again, to ensure even cooking & put back in oven for another 15 mins.
Step 10: Remove from oven
Remove roasties from oven and leave to rest for a few mins.
Step 11: Serve
Place your roasties on a lovely serving dish ( like our vintage Poole Pottery serving plate as seen here!)
Step 12: EAT!
Add your roasties to your Sunday lunch and enjoy!
